White Wine Recipes
Chicken Parmigrigio
Serves 4
| 4 skinless boneless chicken breasts | |
| 2 oz (60mls) white wine | |
| ¾ tsp basil | |
| ½ tsp pepper | |
| 2 tsp butter | |
| 1 lb fettuccine | |
| ½ cup grated parmesan |
à Cut chicken breasts in half.
à In a bowl, mix wine, basil & pepper.
à Sautée chicken in butter until cooked (approx 5 minutes).
à Add wine mixture and simmer on low.
à Cook fettuccine & toss with parmesan & chicken/wine mixture.
à Top with mozzarella cheese (optional)
Wine Suggestion: Italian Pinot Grigio
Southwestern Chicken Chardonnay
Serves 4
| 4 boneless chicken breasts | |
| ¾ cup hot & spicy salsa | |
| ½ tsp cracked pepper | |
| ¼ tsp cayenne pepper | |
| 4 oz (120ml) white wine | |
| ¼ cup olive oil |
à Place chicken breasts in a large baking dish.
à Mix salsa, pepper, cayenne, wine and olive oil; pour over chicken.
à Bake uncovered at 375º F until chicken is cooked (40-45 minutes),
basting with liquids every 10 minutes to keep moist.
Wine Suggestion: Unoaked Chardonnay
Lemon Pepper Traminer Chicken
Serves 4
| 4 skinless chicken breasts | |
| 2 Tbsp lemon juice | |
| ½ tsp grated lemon peel | |
| 1 crushed garlic clove | |
| ¾ tsp cracked black pepper | |
| ¼ tsp salt | |
| 5 oz (150ml) white wine |
à Place chicken in a large baking dish.
à Mix lemon juice, peel, garlic, pepper, salt, & white wine, and pour
over chicken.
à Bake uncovered at 375º F, turning once, for 50 minutes. Baste often.
Wine Suggestion: Gewurztraminer.
Sauvignon Chicken with Garlic & Herbs
Serves 2
| 4 drumsticks | |
| ¾ cup chicken broth | |
| 2 oz (60 mls) + 2 tsp white wine (reserve) | |
| 2 crushed garlic cloves | |
| ½ tsp thyme | |
| ½ tsp ground rosemary | |
| salt & pepper to taste | |
| 2 tsp cornstarch |
à In a large frying pan, brown drumsticks in
butter.
à Add broth, wine, garlic, thyme, rosemary, salt & pepper.
à Cover & simmer 30 minutes, turning after 15 minutes.
à In a bowl, mix cornstarch into the wine. Stir into pan juices and cook
until thick and clear (3-5 minutes).
à Serve chicken with mixture poured over top.
Wine Suggestion: Sauvignon Blanc
VerdicciSole
Serves 4
| 4 large sole fillets | |
| 8 slices tomato | |
| ½ cup sliced black olives | |
| ¼ cup crumbled feta cheese | |
| 2 oz (60 mls) white wine | |
| chopped parsley for garnish |
à Place fillets in a large baking dish.
à Cover each piece with 2 slices tomato, olives, feta, and a dash of
parsley. Splash each piece with white wine.
à Cook at 425º F until fish flakes easily, approx 10 minutes.
Wine Suggestion: Verdiccio (or other dry Italian white)
Garlic & White Wine Sauce
Makes 2/3 cup
| 12 whole garlic cloves | |
| 8 oz (250ml) white wine | |
| 4 Tbsp butter |
à Place cloves and wine in a small saucepan.
à Cover & simmer on medium for 20 minutes.
à Remove & crush cloves. Add butter & enough of the wine mix to achieve
desired consistency.
Müller's Mussels
Serves 4
| 16 oz (500ml) white wine | |
| ½ cup chopped onions | |
| 6 tsp butter | |
| ½ tsp each salt & pepper |
à In a large pot, add wine, onions, butter,
salt & pepper.
à Bring to a boil, reduce heat to medium and cook sauce for 5 minutes.
à Add 3-4 lbs mussels, cover & cook until mussels open.
Wine Suggestion: Müller Thurgau
Pinot Pesto Poultry
Serves 4
|
| 4 boneless chicken breasts |
|
| 2 tsp butter |
|
| 8 oz (250ml) white wine |
|
| 1/3 cup pesto |
à In a small baking dish, melt butter. Add
chicken, and pour wine over top. Spread pesto over chicken.
à Bake at 350º F until juices run clear.
Wine Suggestion: Pinot Blanc
Salmon de Provence
Serves 4
|
| 2 large or 4 small salmon steaks |
|
| 4 oz (120 ml) white wine |
|
| 1 Tbsp olive oil |
|
| ½ tomato, sliced |
|
| 2 garlic cloves, minced |
|
| ½ tsp tarragon |
à Mix all ingredients, except tomatoes, and
spread over salmon. Top with a slice of tomato.
à Cook uncovered at 450ºF for 15 minutes, basting regularly.
Wine Suggestion: Viognier
Dijonnay Chops
Serves 4
|
| 4 pork chops |
|
| 12 oz Chardonnay |
|
| 1/8 cup Dijon mustard |
à Brown chops in a frying pan.
à Add Chardonnay, cover pan & simmer for 10 minutes.
à Remove chops, and blend mustard into the wine. Bring to a slow boil,
and remove when thickened. Top chops with mix.
Wine Suggestion: Chardonnay-Semillon
